CHINESE PEANUT SAUCE


INGREDIENTS

1?2 cup good peanut butter 1?2 cup water (hot) 2 tablespoons soy sauce 2 tablespoons sugar 3 garlic cloves, minced 1 teaspoon cider vinegar 1 -2 tablespoon fresh cilantro, minced cayenne (if peanut butter is unsalted)


DIRECTIONS

Place peanut butter in a small bowl. Add the hot water and stir patiently with a spoon or a small whisk until uniformly mixed. Stir in remaining ingredients and mix well. Cover tightly and refrigerate. Let it come to room temperature before serving. Enjoy!

CHINESE FRIED RICE


INGREDIENTS

3?4 cup finely chopped onion 2 1?2 tablespoons oil 1 egg, lightly beaten (or more eggs if you like) 3 drops soy sauce 3 drops sesame oil 8 ounces cooked lean boneless pork or 8 ounces chicken, chopped 1?2 cup finely chopped carrot (very small) 1?2 cup frozen peas, thawed 4 cups cold cooked rice, grains separated (preferably medium grain) 4 green onions, chopped 2 cups bean sprouts 2 tablespoons light soy sauce (add more if you like)


DIRECTIONS

Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok. Allow wok to cool slightly. Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside. Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces. Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes. Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes. Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve. Set out additional soy sauce on the table, if desired.

CHINESE CHICKEN WITH BLACK PEPPER SAUCE


INGREDIENTS

FOR THE STIR-FRY 1 lb boneless skinless chicken thighs (skinless boneless breast substitution ok) 6 tablespoons cornstarch 1 large onion, diced 1 cup frozen peas and carrot cooking oil hot steamed rice FOR THE SAUCE 1?4 cup oyster sauce 1 teaspoon dark soy sauce 1 teaspoon black pepper 1?2 teaspoon white pepper 1 teaspoon rice wine or 1 teaspoon sake


DIRECTIONS

Note: This recipe calls for boneless thigh meat, which is preferred, but I tried using breast meat and the result was fine also. Mix together sauce ingredients in a small bowl and set aside. Cut chicken into a small dice, about 1/4-inch. Heat 1-2 cups peanut or other cooking oil in your wok. Place cornstarch in a small bowl and begin to dust chicken pieces, shaking off excess. Fry in hot oil in small batches until crispy and golden, about 2-3 minutes; drain. Remove oil from wok and discard. Heat 1 tbsp oil in wok and stir-fry onion about 1 minute; add peas and carrots and cook another 30 seconds. Add sauce mixture to wok along with chicken pieces and stir to coat everything evenly. Serve at once with hot steamed rice.

INGREDIENTS

4 -6 boneless chicken breasts (or boneless pork chops) 3 garlic cloves, minced (or 1/2 tsp. garlic powder) 4 tablespoons soy sauce 3 tablespoons brown sugar 1 1?2 cups chicken broth 1 tablespoon cornstarch broccoli carrot peas (stir fry veggies of your choice) hot cooked rice


DIRECTIONS

Lightly brown chicken breasts in a small amount of oil. Remove from pan and add garlic, soy sauce, brown sugar and 1 cup chicken broth. Stir to mix and return chicken to pan and cover. Simmer for a few minutes until the chicken is done (15-20 minutes). Remove chicken again and add remaining broth, which has been mixed with cornstarch. Bring to a boil to thicken and return chicken to the pan, coating it well.

DIRECTIONS

Pulse parsley in processor to chop. Add remaining ingredients and blend. Separate sauce into equal parts. (Use half for basting or marinade). (Use other half for table service).

2 -3 medium sweet potatoes 2 tablespoons olive oil 1 tablespoon sugar 1 teaspoon chili powder 1 teaspoon kosher salt 1?4 teaspoon fresh ground pepper


DIRECTIONS

Preheat oven to 425. Cut each potato lengthwise into 8 wedges. (I peeled mine, but the original directions did not indicate this). Line a large rimmed baking sheet with parchment paper. Toss potatoes with oil, sugar, chili powder, salt, and ground pepper, until coated. Place sweet potatoes, cut sides down, on baking sheet. Roast potatoes until browned and tender, 15 to 20 minutes. Season with additional salt, if desired, before serving.
